The easiest pumpkin muffins. EVER.

I love baked goods and I don’t discriminate. If it’s sweet, I’m in. While I love eating baked goods, I’m not always in the mood to bake.

ENTER: the easiest recipe ever. There are two ingredients: canned pumpkin and a box of cake mix. That’s it!

I’ve made these muffins the past two Thanksgivings because they are so quick, I can bake them the night before, and guests can just pluck them off the table for breakfast at their leisure the next morning. I also like to get a little fancy with it and add streusel to the middle and top. And, if I’m feeling really adventurous, I throw some pecans or walnuts in the mix too.



1 can pumpkin

1 box yellow cake mix


1. Preheat oven to 350 degrees.

2. Combine pumpkin and cake mix. Mix with beaters until smooth.

3. Spoon mix into lined muffin cups. Add streusel or nut topping.

4. Bake for 12-15 minutes. (Times vary with each oven. Once a toothpick comes out clean from the center muffin, they’re done!) Remove muffins from tin.

Best served warm with a glass of milk or cup of coffee. Enjoy!
