Every holiday season, there are certain things I know will be around without fail. My mom’s snowball cookies are one of those things. Snowballs are my absolute favorites because they’re sweet but not too sweet, crumbly on the inside, and have crunchy pecans in every bite.
Preheat oven to 325 degrees. Cream room temperature butter and sugar together. Slowly add flour. Fold in pecans. Form dough into 1-inch balls and place on parchment-lined baking sheet. These cookies don’t spread much, so place them about one inch apart. Bake on the middle rack 15-20 minutes, depending on your oven. Cookies are done when the bottoms turn golden brown. Remove one cookie at a time from the baking sheet and roll in confectioners sugar before placing on cooling rack.
This recipe makes a small batch (about 12 bite-sized cookies), so I highly recommend doubling the recipe if you’re baking for a bunch. Happy (holiday) baking!
