Roasted Chickpeas

I’m a big fan of simple snacks, so this recipe has been a go-to of mine for years. And with fall feelings right around the corner (come on, cool weather!), this hearty, crunchy snack is great for your next gathering.

Just rinse one can of chickpeas and spread an even layer on a baking sheet lined with parchment paper. Brush with olive oil and season with your choice of spices. I really like sea salt, black pepper and smoked paprika. Place on the middle rack of an oven that’s been pre-heated to 400 degrees. Baked until crispy, 30 – 45 minutes, depending on your oven. Serve warm and store in an airtight container for up to three days.
